Moringa Pesto Pasta

This delicious Moringa and Pesto pasta made with Moringa home pesto sauce is packed with protein, fibre, vitamins and minerals. It is far more healthier than the pesto you buy in the store. Moringa pesto is easy to make, tastes delicious and is super nutritious.

INGREDIENTS

FOR THE PESTO SAUCE

  • 2 handfuls of fresh basil
  • 2 cloves of garlic
  • 50g parmesan cheese
  • 2 Fresh lemon (sqeeze the juice)
  • 1 table spoon of SAWA MORINGA POWDER
  • Salt and pepper
  • 50ml water5
  • 0g of walnuts
  • 50ml extra-virgin olive oil

FOR THE PASTA

  • 300g whole-wheat Fusilli pasta
  • Handful of cherry tomatoes
  • 2 handfuls of fresh spinach leaves
  • 1 small onion, finely chopped
  • Fresh basil, roughly chopped

PREPARATION

FOR THE PESTO SAUCE

  • Add all the ingredients into a food processor or blender and blend to a paste.
  • Add a little amount of olive oil if needed and set aside.

FOR THE PASTA

  • Bring a large pot of water to boil and add a pinch of salt.
  • Cook the pasta till soft.
  • While the pasta is cooking, heat a little olive oil in a frying pan and sauté the onion until soften, then add the fresh spinach and stir.
  • As soon as the pasta is cooked, drain in a colander, return it to the pot and add the onion and spinach mix and the chopped cherry tomatoes.
  • Add pesto sauce, salt and pepper to taste and carefully stir the pasta.
  • Pour into a serving dish and toss through grated parmesan cheese before serving.
